Sweet Potato Home Fries

An easy, healthy take for a fresh source of finger grabbing carbs.

  • 2 sweet potato
  • 1.25 tbsp olive oil
  • 1 tbsp parsley (minced)
  • Sea Salt (to taste)
  • Black Pepper (To Taste)
  1. Preheat oven to 350ºF.
  2. Rinse and dry sweet potatoes. Cut ends off, then cut into slices an inch thick. Cut these slices into sticks.

  3. Place sweet potatoes on a baking sheet. Drizzle with olive oil, then add parsley and salt. Toss with your hands to coat well.

  4. Place in the oven and roast for 15 minutes. Stir and flip the sweet potatoes over, then roast for an 20 more minutes, or until soft enough to pierce easily.
