Salmon Cakes

Keeping a couple of cans of salmon stocked away makes for a great (and delicious) emergency dinner.

  • 2 cans salmon (14oz cans, skin and bones removed)
  • 3 eggs
  • 3 tbsp tomato paste
  • 3 cloves garlic (minced)
  • 1/4 cup mustard sauce
  • 1 tbsp coconut oil (spray works too)
  1. Crack and beat the eggs
  2. Add the rest of the ingredients to the bowl and mix
  3. Grease muffin tins and distribute mix into tins (should fill 12)
  4. Bake at 425ºF for 10-15 minutes
